I've been making a bunch of yummy stuff lately so I thought I'd share.
These almond cookies are delicious. I usually use the pulp that comes out of making almond milk. So, usually that comes to about a 1.5 cups of almond pulp and then I add 1 cup of whole wheat flour. I also used gluten free flour once and it turned out yummy! No dry and crumbly like the usual gluten free.

Recipe alterations - cookies and pancakes
Isn't funny how the world works? For xmas this year, I received a cute little journal from my niece. She wrote in it that I could use this journal to write my recipes. I thanked her for such a thoughtful gift all the while thinking in my head, well my dear girl, I actually cook and bake off of other people's recipes...never my own.

Paleo brownies
Mmm, these brownies are amazing! I can't believe there is no flour used. No, I am not going paleo but the diet does seem quite intriguing to me. Why not just eat meats, veggies and fruits? Why do we even need grains? Seems such a clean diet. Of course, I could not be strictly paleo because I love to bake. And often the best tasting things (ahem, chocolate chip cookies, shortbread cookies) really don't taste great unless I use all-purpose flour.
Well, I say that now but it's because I have not tried to tinker with some recipes using healthier flours like sprouted spelt or sprouted wheat. One day I will try but right now it seems so wasteful to "test" and then not have a batch turn out well and we end up having to toss the whole batch. I don't like doing that.
Back to the Blueberry Brownies...I made these for a party where two guests were paleo. Oh, these are so moist and delicious. The original recipe calls for a blueberry sauce too but I didn't make it and the brownies weren't missing the sauce at all.
