Two outstanding recipes

Hi! I am saying these two recipes that I am sharing below are outstanding because they are! I've made them several times for different groups of people and they ALWAYS comment on how delicious these two dishes are! And they are both super easy.


1. Goat Cheese Date bites
This recipe is from the guy at Dates by Davall
They have these dates that taste almost caramel-y. Were they they honey dates? Can't remember. Anyhow, you take the pit out, fill with a delicious goat cheese and top with a toasted pecan.
Done. So easy yet so delicious.

2. Lemon Potatoes
This recipe is from a friend and it's so good. Every time I make them, people are obsessed.
3-4 pounds of potatoes, cubed
1/2 cup fresh lemon juice
1/3 cup olive oil
2 tsp salt
1/2 tsp black pepper
1 1/2 teaspoons dried oregano or 2 tablespoons fresh oregano
2 garlic cloves, minced or pressed
3 cups hot water

fresh parsley

Put cut potatoes in an 8x12 pan with sides. Combine the rest of the ingredients and pour over the top. Bake uncovered for 1 1/2 hours at 350.

Stir every 20 minutes or so and add water if it evaporates early.  Watch them the last 30 minutes so they don't burn and let all the water evaporate at the end until only the oil is left.

Serves about six, stores well and makes great leftovers.  Good hot or cold.

Garnish with parsley and serve.
